Hey guys so I am looking into getting Konig Ampliforms for my 02 IS300 sedan. My question is, what is the least amount of offset you think i can get away with? Want as much concavity as i can get away with. looking at an 18x8.5

Mine is a staggered setup, I've got 8.5 on the front and 9.5 on the back, and both are 30mm . If you go with squared setup (same width all around), then you'll want the lower number on the back and bigger on the front to have a more balanced/even look. My winter setup is squared (I've got 8.75" all around) and I've got 20mm on the back and 35 on the front. I don't use stretched tires, but I don't use meaty tires either. My car is slammed, and the fenders are rolled/pulled a medium amount. So it just depends, your best bet is to look at other cars and find one that has the setup you're looking for, and then use that.
