Okay, so I've test drove nearly 10 - 15 IS300's ranging from '02 - '05, all of which were E-Shift...

Just yestarday, I drove an '04 IS300, E-Shift. Now this was the first test drive that I actually used the feature. I noticed that it started in 2nd gear.

Okay now are all of them that way? If they are, why? Or was this an tech. issue with the vehicle itself?

It's normal. The gear you see on the display is the gear it will shift up too. It's not necessarily the gear you are in. ie. when you shift over and it displays 5th it will shift between gears 1 and 5.
