Is300 has 4 wheel disc brakes. The parking brake is a drum type, I guess you could delete it, but why would you want to?

When we had our SC300 racecar with very similar parking brake setup we deleted all of it. Your stock rear rotor will still bolt up just fine. It wasn't an insignificant amount of weight and also part of it is unsprung which is always nice to remove. Only you will know if not having a parking brake will cause headaches or not. I would only suggest it for a trailered track only car.

I was curious if it can be done and having the option to delete it is a good idea, if getting a hydro e-brake? Idk if that's stupid or not.

No man, not stupid at all. Making room for a hydro brake makes sense to me.
